Coconut Banana Bread
Ingredients:
Coconut oil- 1 cup
Sugar-2 cups
Crushed pineapple- 1 can 5 ½ ounces (include juice)
Flour-4 cups
Baking powder- 2 teaspoons
Baking soda-1 teaspoon
Salt-3/4 teaspoon
4 Eggs
1 Banana
Procedure:
Preheat oven (350 °F). Mix sugar and coconut oil together. Put in the crushed pineapple with juice, eggs, and banana. Mix flour, coconut baking powder, baking soda, and salt. Pour the batter into two greased and floured “9 x5” loaf pans, Put in the oven for 1 hour. Loaf can be cut into 16 ½ inch slices.

Coconut Oatmeal Cookies
Ingredients:
Brown sugar- 1 cup coconut oil, brown sugar, eggs, and vanilla
Coconut oil- ½ cup
2 Eggs
Vanilla extract-1/2 cup
Flour-1 ½ cups
Oats-1 cup
Shredded coconut -1/2 cup
Baking soda-1/2 teaspoon
Cinnamon-1/2 teaspoon
Salt-1/2 teaspoon
Walnuts- ½ cup
Procedure:
Preheat oven (375 °F). Combine the first four ingredients and stir to make a wet mixture. In a separate container, combine the remaining ingredients. Then pour in the wet mixture and. Mold the mixture into a ball (1 ½ inch). Flatten the balls on the ungreased cookie sheet and make sure that each piece is at least 2 inches apart. Put it in the oven for 15 minutes.
Note: This recipe makes 24 cookies.
